Water Quality and Temperature
Water accounts for 98% of a cup of coffee. It's critically important to use only fresh, filtered or spring water for brewing. Distilled water is not a good choice due to the lack of beneficial elements.
When makeing coffee, a very good rule for all methods of brewing is "Do not exceed 200 degrees Fahrenheit." Be extra cautious at sea level because water boils at 212F and that's too hot for coffee brewing. To the contrary, at 9,000 feet (above sea level) elevation, water boils at approximately 195. In this case, it's imperative to pre-heat all brewing devices and to maintain water temperature through all stages of brewing.
