Our Newest Partner: Pekoe Sip House

We're super fired up about the recent addition of the Pekoe Sip House locations to the Conscious Coffees family of retailers.  The Sip House concept is a refreshing approach to the local hand crafted beverage house, offerring visitors a place to 'sip, relax, and enjoy'.  All coffee by the cup is prepared with a French Press and visitors have the oportunity to sample each brew comparitively.  We are oferring new crop selections from Ethiopia, Sumatra, and Guatemala to begin with which, when sampled next to one another, bring the sipper a vast spectrum of flavors and sensations. 

We're really excited about the new crop Ethiopians currently showing up.  These are the lots that I contracted during my recent visit to Ethiopia and due to our long term relationship with the Cooperative Unions have arrived to us at a time when so many other roasters are struggling to procure these types.  In particular, the Kilenso Mokanesa Cooperative from Sidamo prepared a washed lot of very high elevation grown Bourbon that arrived with classic Sidamo origin qualities of floral fragrance and lemony acidity.   Also exciting is the new crop arrival of our long held relationship with the Chajulense Cooperative folks of San Marcos, Guatemala.  This coffee came in 2 full points higher in cup quality than last years best lot arrival, displaying the classic chocolatey mouthfeel and ripe fruit notes up front.

Espresso has taken on a new twist for us with the addition of Pekoe.  We sampled many Brazil coffees and found a classic, deep, nutty unwashed organic Barzil that, when roasted to a bit higher temp than we usually hit, produces a dark chocolatey, hazelnut presence which blends with milk scrumptiously.  We will be reserving this recipe, which also includes washed and unwashed Ethiopians, solely for Pekoe.  Look for a custom labeled can of this new concoction coming soon and available only at the Pekoe locations.  We are fortunate to be using La Marzocco espresso machines and brand new Mazzer Major Electronic grinders in each location.  The combination of this equipment with the new espresso blend will bring their espresso beverages to an entirely new level.  Please come in and try the new digs and please send us feedback on your experience so we can continue to construct a better sipping platform.
