Chajul's main goal is “to promote a sustainable development model that is environmentally sound, economically feasible, fair from a social point of view, and appropriate from a cultural standpoint”. With our continued support, they have become a model for sustainable coffee production. Farmers are continuing to increase their standard of living as well as diversify alternative productions. Guatemala has 7 distinct coffee growing regions and Quiche is not one of them. It is located North of Lake Atitlan, between Huehuetenango and San Marcos, at the base of the Majestic Mountains. The quality of the coffee continues to improve every year and has become our favorite selection from Guatemala. For as high as the coffee grows in the mountains, the acidity is only medium but very complimentary to the rest of the cup profile. This allows us to roast the coffee lighter so as to preserve the delicate light almond notes that follow the initial soft acidity. Caramel sweetness stands out from the fragrance through the finish.
